YUMMY summer treat!

We made these delicious fruit kabobs after I saw a picture of them on Pinterest.  I loved the rainbow color and of course the nutritional factor of them.  I wanted to make them but wasn’t sure for what.

My 8 year old daughter Malia and I decided that we would make them as a special treat for her 3rd grade class on their first day of FCAT testing (Florida Comprehensive Assessment Test).  3rd grade is the first time that you take the test and they had spent the previous 3 months preparing for it.  The entire class was so nervous, they weren’t sure what to expect.

As a surprise, Malia and I made them so she could take them to school and the class could enjoy a snack after the test. They came out so great and the kids LOVED them.  The original recipe calls for all kinds of colored fruit (i.e. kiwi, strawberries, etc.) but we tried to make them as kid friendly as possible. We used watermelon, cantaloupe, pineapple, honeydew, blueberries and red grapes.  It was so easy to make and as you can see, they were certainly rainbow in color!
